Mangu

These mashed platanos topped with sauteed onions are great at breakfast or as an accompaniment for the evening meal.

2 green platanos, peeled

3 cups water

3 Tab. olive oil or butter

2 tsp. salt

1/2 cup purple onion thinly sliced

 

Boil platanos in water until tender (Like cooking potatoes for mashed potatoes). Drain (reserving broth), Mash adding reserved water plus 1 Tab. oil of butter, until consistency of mashed potatoes. Add salt to taste. Sauté onion slices in remaining 2 Tab oil or butter until limp. Mound mangu on a serving platter and garnish with sauteed onions.

Serve immediately.
