- Arroz con Leche
- (Rice pudding)
2 eggs
2 cups milk
2/3 cup packed brown sugar
1 tsp. maple flavoring
1 1/2 cups cooked rice
1/3 cup raisins
Beat eggs lightly. Stir in milk, sugar, flavoring, and rice. Add raisins.
Spoon into buttered 1 quart casserole and set in a shallow baking pan
containing about 1 inch hot water. Bake for approx. 1 1/2 hours at 325
degrees or until set in center. If a knife inserted in the center comes out
clean it is done. Serve with whipped cream and a sprinkling of cinnamon.
